Breakfast (or anytime!) Muffins

These muffins are really terrific and provide lots of good, healthy ingredients. They make a delicious grab-and-go for breakfast or a great afternoon snack. If you want it to be even healthier, you can cut back on the sugar to 3/4 cup and eliminate the salt. If you do that, just increase the cinnamon to 2 teaspoons. And if you don’t like coconut, just leave it out! If you are allergic to nuts, leave them out too! Adjust the baking time to the size of the muffins. I have made them in regular size pans, or the minis. Both are yummy! These muffins can be frozen for up to 2 months.
Yield: 16-20 Muffins (48 minis) Preheat oven to 350 degrees
1 cup all-purpose flour
1 cup whole wheat flour
1 1/2 cups sugar
2 teaspoons baking SODA
1 teaspoon cinnamon
1/2 teaspoon salt
3 large eggs
1 cup vegetable oil
1 teaspoon vanilla
1/2 cup coconut
2 cups unpeeled chopped apples
1/2 cup raisins
1/2 cup grated carrots
1/2 cup chopped walnuts or pecans
Preheat oven to 350 degrees. Line muffin tins with paper cups.
In a large bowl, combine both flours, sugar, baking soda and cinnamon. Whisk to blend.
In another bowl, whisk the eggs, oil and vanilla. Stir in the coconut, apples, raisins and carrots. Add nuts and stir to blend. Pour into the flour mixture and stir to combine. The mixture should be all moist, but will be lumpy. Don’t over mix.
Spoon the batter into prepared muffin cups: about 2/3 full.
Bake until muffins are golden brown and springy to the touch. Check after 18 minutes.
Depending on your oven, they could bake 20 – 25 minutes. (and if you make minis, check after 15 minutes.)
Let cool in pans for 5 minutes, then remove to a wire rack to cool completely.
