Homemade Snacks Our Grandkids Love!

from our founders, Leslie & Kay’s test kitchen

We found three terrific recipes here to share! Our grandkids went crazy over these snacks. Consider this: whether it’s an after-school snack, lunch box treat, or even a movie night at grandma’s, these homemade snacks will have the kids smiling from ear to ear, and they might not even care that they’re actually good for them. Even better, make them together!

Peanut Butter Cheerio Bars
Peanut Butter Cheerio Bars Recipe
Ingredients

1/2 cup crunchy natural peanut butter, well-stirred
1/2 cup honey
3 cups toasted whole grain oats cereal

Instructions:

1. Line an 8 x 8 inch square pan with parchment paper.
2. Combine peanut butter & honey in a large saucepan and set over medium heat. Heat until mixture just starts to simmer, about 2-3 minutes, stirring. Remove from heat and stir until mixture is well-combined.
3. Stir in cereal until evenly coated. Pour mixture into prepared pan, cover with parchment, and press firmly. (A pastry roller will help to firmly and evenly pack down the mixture so the bars hold their shape). Chill in the refrigerator for 1 hour. Cut into bars. Store individually wrapped in the refrigerator.

Easy Apple Bites
Apple Bites Recipe
Ingredients:

½ cup of packed light brown sugar
1 1/4 teaspoons of apple pie spice
4 tablespoons of melted butter + a little butter for cooking apples in frying pan
1/3 cup of chopped pecans
One small Granny Smith apple that has been cored and sliced into eight slices
One can of Pillsbury Original crescent rolls

Instructions:

1. Preheat oven to 375 degrees. Prepare a baking sheet lined with parchment paper. Put brown sugar and apple pie spice into a small bowl. Mix them until well combined and set aside.
2. Put a little butter into a frying pan and let it melt. Add the apple slices into the melted butter. Cook and stir for few seconds. When the apples have softened, turn off the heat and set aside.
3. On the baking sheet with the parchment paper, assemble the crescent roll as flat triangles not yet rolled. Take the brown sugar mixture and spread on top of the crescent roll triangles evenly. Sprinkle with chopped pecans.
4. Place an apple slice on the wide end of each crescent roll triangle. Next, wrap the crescent roll dough around the apple slice. Spread melted butter over each crescent roll. You can also add additional apple pie spice as the topping of the dough.
5. When the crescent roll triangles are done, put the baking sheet into the oven and bake them all for around10-12 minutes, or until the color of the dough turns golden brown. Cool for 5 minutes before serving.

Chewy No Bake Marvel Bars
Marvel Bars Recipe
Ingredients:

4 tablespoons unsalted butter, cut into pieces, plus more
4 cups mixed unsweetened puffed grain cereal (such as corn, rice, kamut, and/or millet)
1 cup old-fashioned oats
1½ cups dried fruit (no sulphites please), nuts, seeds, unsweetened shredded coconut or coconut flakes, and/or chocolate chips (chopped if large)
⅓ cup (packed) light brown sugar
⅓ cup honey
½ teaspoon kosher salt
⅓ cup creamy nut butter (such as cashew, almond, or peanut)
1 teaspoon vanilla extract

Instructions:

1. Butter a 13×9″ baking dish. Toss puffed cereals, oats, and dried fruits, nuts, seeds and/or coconut (all mix-ins except chocolate chips) in a large bowl with your hands to evenly distribute.
2. Bring brown sugar, honey, salt, and 4 Tbsp. butter to a boil in a small saucepan and let cook 1 minute. Remove from heat and whisk in nut butter and vanilla until smooth. Drizzle over puffed rice mixture and stir with a large rubber spatula until everything is evenly coated. If using chocolate chips, let mixture cool about 5 minutes before mixing in.
3. Scrape mixture into prepared dish and press and compact down into an even layer with buttered hands. Let cool at least 1 hour before cutting into bars.

Bars can be made 1 week ahead. Store airtight at room temperature.
