This is a great recipe any time anyone is around for breakfast! It’s easy to do and fun to eat. You can easily pick up these breakfast treats with your hands. Adults like to eat 3 or 4, so you might want to double the recipe. The great thing is: you can make them ahead. They are great served right away or out of the refrigerator, or they freeze well and can be popped in the microwave for a minute when you want to use them! Enjoy!
Yield: 12 muffins Preheat oven to 350 degrees
1 link of Italian sausage- remove casing
1/2 red pepper, diced
2 tablespoons chopped onion
1 tablespoon flour
1 1/2 cups baby spinach, chopped
3/4 cup egg whites (I use the store bought cartons) (about 7 egg whites)
1/4 cup low fat milk
1/2 cup cheddar cheese. (I like Mozzarella)
Dash Salt and pepper (optional)
Preheat oven to 350 degrees. In a sauté pan, cook the sausage until not pink. Add the peppers and onion and sauté until veggies soften. Add seasonings if desired. Add the flour and stir in.
Stir in the chopped spinach and cook until wilted. Remove from heat and cool
In a large bowl, whisk together the eggs, egg whites and milk untol pale and smooth. Stir in sausage mixture and cheese.
Spray a 12-cup muffin tin with non-stick spray. Spoon mixture into cups. Bake until eggs are firm but not dry – about 15 minutes. Let sit for 10 minutes on a baking rack, then remove from pan. Serve and enjoy!
