Pineapple Ginger Lemonade Popsicles*
It’s summer, and that time of the year where we long for something refreshing. These popsicles are just the ticket. Of course, make this a grandchild-grandparent project. You may even want to add semisweet chocolate morsels. Yum!

12 oz chopped fresh pineapple
½ cup fresh lemon juice
½ cup filtered water
¼ cup raw honey
½ inch piece of fresh ginger, peeled and finely grated
2 drops of Ginger oil
4 drops of Lemon oil

  1. Combine the pineapple, lemon juice, water, honey, and grated ginger in a blender. Blend on high until smooth.
  2. Stir in Ginger oil and Lemon oil.
  3. Transfer mixture to popsicle molds and freeze until firm.
