Fun food and sweet desserts- that’s what this recipe is all about! These little miniature cheesecakes are a make ahead dessert. You can have them stored in the fridge and ready to go… whenever! But best of all, we made these with our grandkids and let them use their imaginations (and of course whatever was in the pantry) to top off these delectable treats. We promise you – this treat is a definite go to!
18 mini vanilla wafers
1 (8 oz.) package of cream cheese, softened
½ cup sugar
½ tsp. vanilla extract
1/8 tsp. nutmeg (optional)
Topping suggestions: Canned blueberry or cherry pie filling, chopped mini chocolate sandwich cookies, caramel, jam or preserves and/or fresh berries
- Preheat oven to 325. Line 18 miniature 1 ¾ muffin cups with paper liners. Put 1 vanilla wafer in each cup, trimming to fit if needed.
- Beat together cream cheese and sugar in large bowl until smooth. Beat in egg, then stir in vanilla and nutmeg( if used). Spoon mixture evenly into prepared muffin cups, filling each nearly full.
- Bake until set, about 20 minutes. Let cool completely, and then top with desired toppings. Chill, covered, until ready to serve.
