It’s football season, and time for a casual party. Try this sandwich on for size. It’s so easy and can be made ahead of time. This 3-foot sub will be gone in an instant!
What you’ll need:
3 small zucchini
1 tbsp. sugar
¾ tsp. kosher salt
1 small shallot, sliced
2 tbsp. chopped dill
1 tbsp. white wine vinegar
2 large bakery loaves French bread
8 slices cooked bacon, finely chopped (optional)
1 lb. sliced turkey
1 lb. sliced roast beef
1 lb. sliced deli ham (or any deli meat you prefer)
3 tomatoes, thinly sliced
¾ lb. sliced Havarti cheese
- Using a mandolin or a sharp knife, thinly slice the zucchini lengthwise into long strips. Toss with the sugar, salt, shallot, dill and vinegar. Set aside and stir occasionally.
- Slice loaves in half horizontally. Trim one end from each loaf and match the cut ends to create one large sandwich. Cover a wood plank (we used a 4-foot-long plank from the hardware store) with parchment or plastic wrap and place loaves on top to assemble.
- Stir together the mayonnaise and bacon and spread evenly on the bottom of the connected loaves. Top with the sliced turkey, roast beef, ham, tomatoes, and cheese.
- Drain any liquid from zucchini and add to the sandwich, then cover with the bread tops. Wrap sandwich and board together with plastic wrap if transporting. Serves 12 to 14.
