Yummy Holiday Starters!

Well, well, old man Winter may have visited today, but what if you have company coming over?  Need great dip recipes? Here’s one that’s healthful & yummy, and one that is fabulous, but maybe not as healthy. You figure out which is which… Happy Holidays!

Mixed Green Dip*
For an easy and much healthier take on the creamy cheesy classic, try this update.

Mix 1 cup ricotta with 1 cup sautéed or steamed chopped greens (kale, spinach, chard, or whatever you have on hand) in a shallow dish, season to taste, and bake at 425° until the top is light golden brown, about 12 minutes. Serve the savory spread with crostini, cut pita triangles or crackers!

Artichoke Dip
1 can quartered artichoke hearts
1 small can of button mushrooms
1 cup mayonnaise
1 med. container shredded parmesan cheese
1 Tablespoon dried minced onions

Mix all ingredients together. Place in baking dish for approximately 50-60 minutes in 350 degree oven. Serve with chips, melba rounds, sliced baguette, crackers.
